- 16 pepperoni slices (about 45 g)

Instructions
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Scoop 1 tablespoon of shredded mozzarella onto the sheet for each chip.
- Flatten each mound into a 2-inch circle and keep at least 2 inches apart.
- Place one pepperoni slice in the center of each cheese circle.
- Bake 8–10 minutes, or until cheese is bubbling and edges are deep golden and lacy.
- Bake 1–2 minutes longer if the centers look pale.
- Cool on the pan for 5 minutes, then transfer to a rack to crisp fully.
- Serve once cooled and crisp.
