Description

A simple, high-protein, and low-carb pizza crust made with only three ingredients cottage cheese, flour, and baking powder. This healthy and versatile crust offers a soft, chewy texture and can be customized with your favorite toppings. Perfect for busy weeknights, meal prep, or anyone seeking a lighter, gluten-free, or keto-friendly alternative to traditional pizza crust.

Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup all-purpose flour (use gluten-free or almond flour for dietary needs)
  • 1 teaspoon baking powder
  • (Optional toppings)
    • ¼ cup pizza sauce
    • ½ cup shredded cheese
    • Desired toppings (pepperoni, vegetables, herbs, etc.)

Instructions

  1. Preheat oven to 450°F (232°C) for standard ovens or 635°F (335°C) for pizza ovens.
  2. Line a baking sheet with parchment paper and lightly grease it.
  3. Add cottage cheese to a blender or food processor; blend until smooth.
  4. In a large bowl, combine flour and baking powder.
  5. Add blended cottage cheese and mix until a dough forms.
  6. Transfer dough to the prepared baking sheet or pizza stone.
  7. Press or roll into a 12-inch circle.
  8. Bake for 10–12 minutes in a standard oven or 6 minutes in a pizza oven, until firm.
  9. Remove from oven, add sauce, cheese, and toppings.
  10. Broil on high for 1–2 minutes, until cheese is golden and bubbly.
  11. Let cool slightly before slicing and serving.

Notes

  • Use full-fat cottage cheese for a softer, richer crust.
  • Ensure the dough is evenly spread for even cooking.
  • Avoid over-broiling to prevent burning.
  • Make it low-carb by using almond or coconut flour.
  • Make it vegan by using silken tofu and plant-based cheese.
  • Store leftovers in the fridge for up to 3 days or freeze up to 3 months.
