Description

Magic 3-ingredient gluten-free bagels are soft, chewy, and ready in under 30 minutes made with just gluten-free flour, baking powder, and Greek yogurt. Perfect for breakfast, custom toppings, and easily made dairy-free or vegan.


Ingredients

For the Bagels:

– 2 cups (240g) gluten-free all-purpose flour (must contain xanthan gum)

– 2 tsp baking powder

– Pinch of salt

– 1 to 2 cups (240–480g) plain unsweetened Greek yogurt (dairy-free if needed)

For Topping (optional):

– 1 large egg

– 1 tsp water

– Pinch of salt

– Toppings: everything bagel seasoning, sesame seeds, poppy seeds, etc.


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together gluten-free flour, baking powder, and salt.
  3. Add 1 cup Greek yogurt and stir until a shaggy dough forms.
  4. Use your hands to knead briefly into a smooth ball. If too dry, add more yogurt, 1–2 tbsp at a time.
  5. Divide dough into 6 equal portions. Roll each into a ball.
  6. Poke a hole through the center with your thumb, then gently stretch into a 2.5–3-inch ring.
  7. Place bagels on the prepared baking sheet.
  8. Make egg wash: whisk egg, water, and salt. Brush onto each bagel.
  9. Sprinkle with desired toppings.
  10. Bake for 20–22 minutes, rotating the pan halfway, until golden brown.
  11. Cool slightly before slicing and serving.

Notes

– Flour must contain xanthan gum if not, add ½ tsp to dry ingredients.

– Dough should be soft but not sticky adjust yogurt as needed.

– Vegan option: Use plant-based yogurt and replace egg wash with 1 tbsp plant milk or flax egg (1 tbsp ground flax + 2.5 tbsp water).

– Dairy-free: Use dairy-free yogurt and skip egg wash or use plant milk.

– Keto/low-carb: Not recommended with standard GF flour almond/coconut flour won’t yield the same texture.

– Storage: Keep in an airtight container for 3 days or freeze up to 3 months. Toast from frozen for best results.
