Instructions
- Blend rolled oats in a food processor until finely ground into oat flour.
- In a mixing bowl, combine oat flour, all-purpose flour, and eggs; mix until dough forms.
- Divide dough into 6–8 equal portions and roll each into a ball.
- Roll out each ball between two sheets of parchment paper into thin circles (6–7 inches wide).
- Heat a nonstick skillet over medium heat.
- Cook each tortilla for 1–2 minutes per side, until lightly browned and pliable.
- Stack tortillas on a plate and cover with a kitchen towel to keep warm.
