These 3-ingredient peanut butter cookies are soft, chewy, and incredibly easy to make! With just peanut butter, sugar, and eggs, you can whip up a delicious batch in under 20 minutes. Naturally gluten-free and perfect for a quick dessert or snack.


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the dough by combining peanut butter, sugar, and egg in a mixing bowl. Stir until smooth.
  3. Scoop and shape the dough into small balls using a tablespoon or cookie scoop. Place them on the baking sheet, leaving 2 inches of space between each.
  4. Create fork marks by pressing a fork into each cookie in a criss-cross pattern.
  5. Bake for 9-12 minutes until the edges are set but the centers remain soft.
  6. Cool and enjoy by letting the cookies sit on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

  • For softer cookies, add an extra egg yolk.
  • If using natural peanut butter, stir well to prevent oil separation.
  • Chilling the dough for 15 minutes helps prevent spreading.
