Description

4-ingredient peanut butter cornflake bars are no-bake, crunchy, creamy treats layered with a rich chocolate topping ready in minutes and perfect for snack lovers. Naturally gluten-free adaptable and easily made vegan.


Ingredients

For the Base:

– 1 cup (250g) creamy unsweetened peanut butter

– ½ cup (120ml) maple syrup or honey

– 3½ cups (105g) cornflakes

For the Chocolate Topping:

– 1 cup (175g) chocolate chips (dairy-free if needed)

– ¼ cup (60g) creamy unsweetened peanut butter


Instructions

  1. Line a 9×9-inch square pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, mix peanut butter and maple syrup (or honey) until smooth and glossy.
  3. Gently fold in cornflakes until evenly coated—avoid overmixing to preserve crunch.
  4. Transfer mixture to the prepared pan. Press down lightly and evenly with a spatula or wet hands (do not compact too firmly).
  5. In a microwave-safe bowl, combine chocolate chips and ¼ cup peanut butter.
  6. Melt in 20–30 second intervals, stirring between each, until smooth. (Alternatively, use a double boiler.)
  7. Pour melted chocolate over the cornflake base. Spread evenly with an offset spatula.
  8. Refrigerate for at least 1 hour, or until completely set.
  9. Lift out using parchment overhang. Cut into 12–16 squares with a sharp knife.
