Ingredients
For the Base:
– 1 cup (250g) creamy unsweetened peanut butter
– ½ cup (120ml) maple syrup or honey
– 3½ cups (105g) cornflakes
For the Chocolate Topping:
– 1 cup (175g) chocolate chips (dairy-free if needed)
– ¼ cup (60g) creamy unsweetened peanut butter
Instructions
- Line a 9×9-inch square pan with parchment paper, leaving overhang on two sides.
- In a large bowl, mix peanut butter and maple syrup (or honey) until smooth and glossy.
- Gently fold in cornflakes until evenly coated—avoid overmixing to preserve crunch.
- Transfer mixture to the prepared pan. Press down lightly and evenly with a spatula or wet hands (do not compact too firmly).
- In a microwave-safe bowl, combine chocolate chips and ¼ cup peanut butter.
- Melt in 20–30 second intervals, stirring between each, until smooth. (Alternatively, use a double boiler.)
- Pour melted chocolate over the cornflake base. Spread evenly with an offset spatula.
- Refrigerate for at least 1 hour, or until completely set.
- Lift out using parchment overhang. Cut into 12–16 squares with a sharp knife.
