Description

A no-bake, protein-packed snack combining rich chocolate, refreshing peppermint, and a creamy nut butter base. Perfect for health-conscious snackers and versatile enough for gluten-free, vegan, or low-sugar diets.


Ingredients

– 1 cup chocolate protein powder (unsweetened preferred)

– ½ cup almond butter or cashew butter (or substitute with peanut butter or sunflower seed butter)

– 3–4 tablespoons non-dairy milk (adjust as needed)

– ¼ teaspoon peppermint extract (adjust to taste)

– 3 tablespoons maple syrup (optional, omit for low-sugar version)

– ½ cup chocolate chips (use sugar-free if needed)

– 1 teaspoon coconut oil (optional, for smoother coating)

– Crushed candy canes (optional, for topping)


Instructions

  1. In a mixing bowl, combine almond butter, chocolate protein powder, peppermint extract, and non-dairy milk. Mix until fully combined. Add additional milk one tablespoon at a time if the mixture is too dry to roll.
  2. Use a medium-sized cookie scoop to portion the mixture into 2-tablespoon-sized portions. Roll each portion into a smooth ball between your palms. Place the balls on a plate and freeze for a few minutes while preparing the coating.
  3. Melt chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
  4. Dip each protein ball into the melted chocolate, ensuring it’s fully coated. Place the coated balls on a parchment-lined plate. Sprinkle with crushed candy canes if desired.

5. Transfer the plate to the fridge until the chocolate hardens. Store in an airtight container.
