Description

Air fryer asparagus is a quick, healthy side dish featuring tender-crisp asparagus roasted with olive oil, garlic, and herbs. Perfect for weeknight dinners, meal prep, or entertaining guests. Easily made gluten-free or vegan.


Ingredients

For the Asparagus:

– 1 lb asparagus stalks, trimmed

– 2 tbsp olive oil (or avocado oil for higher smoke point)

– ¼ tsp garlic powder

– ¾ tsp dried Italian seasoning (or substitute with thyme, rosemary, or dill)

– Kosher salt and black pepper, to taste

For Garnish (optional):

– 1 tbsp fresh parsley leaves, chopped

– Lemon wedges, for serving


Instructions

  1. Preheat the air fryer to 400°F (204°C).
  2. In a small bowl, stir together olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Trim the woody ends of the asparagus stalks and arrange them in a single layer on a plate.
  4. Drizzle the olive oil mixture over the asparagus and toss to coat evenly.
  5. Place the asparagus in the air fryer basket in a single layer. Avoid overcrowding to ensure even cooking and crispiness.
  6. Cook for 6 minutes, shaking the basket halfway through to redistribute the asparagus for uniform browning.
  7. Remove from the air fryer and sprinkle with fresh parsley. Serve with lemon wedges if desired.

Notes

– Use medium to thick asparagus stalks: Thin stalks may overcook quickly reduce cooking time by 1–2 minutes if using thin asparagus.

– Avoid overcrowding: Cook in batches if needed to ensure proper airflow and even cooking.

– Gluten-free: Naturally GF, just verify all seasonings are certified gluten-free if needed.

– Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer or oven to restore crispiness.
