Description

Almond croissants are a beloved French pastry known for their flaky, buttery layers and rich almond filling. Whether enjoyed for breakfast, brunch, or as a dessert, these pastries offer a perfect balance of crispiness and nutty sweetness.

Ingredients

Scale

For the Almond Filling:

  • ½ cup almond paste
  • ¼ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tsp almond extract (optional)
  • ½ tsp orange zest (optional)

For the Croissants:

  • 6 pre-baked croissants (preferably day-old)
  • ¼ cup simple syrup (for brushing)
  • ½ cup sliced almonds (for topping)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the Base:
    • Slice the croissants in half horizontally.
    • Lightly brush the cut sides with simple syrup to add moisture.
  2. Make the Almond Filling:
    • In a bowl, mix almond paste, softened butter, sugar, and egg until smooth.
    • Add almond extract and orange zest for enhanced flavor.
  3. Assemble and Bake:
    • Spread or pipe the almond filling inside each croissant.
    • Close the croissants and spread a thin layer of filling on top.
    • Sprinkle sliced almonds over the croissants.
    • Bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until golden brown.
  4. Finishing Touches:

Let cool slightly, then dust with powdered sugar before serving.

Notes

  • For a chocolate-almond variation, add chocolate chips inside the croissants or drizzle melted chocolate on top.
  • Day-old croissants work best as they absorb the almond filling without becoming soggy.
  • Store in an airtight container for up to 2 days or freeze for longer storage.
