Description

Apple Mixture

  • 2 medium baking apples, peeled and chopped
  • ½ cup light brown sugar

Batter

  • 1 large egg, room temperature
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Glaze

  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan with nonstick spray or cake release.
  2. In a medium bowl, mix apples, brown sugar, cinnamon, and ginger. Set aside.
  3. In a large bowl, whisk together egg, granulated sugar, oil, sour cream, and vanilla until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Add dry ingredients to wet ingredients and mix until almost fully incorporated.
  6. Fold in ¾ of the apple mixture.
  7. Pour batter into the prepared loaf pan; top with remaining apples.
  8. Bake 50–55 minutes or until internal temperature reaches 200°F (93°C).
  9. Cool in the pan for at least 30 minutes.
  10. Whisk powdered sugar, vanilla, and milk to form a smooth glaze; adjust consistency as needed.
  11. Drizzle generously over the cooled bread and serve.
