  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, cubed
  • 8 oz cream cheese, cubed
  • 10.5 oz cream of chicken soup
  • 3 cloves garlic, minced
  • 0.7 oz Italian dressing mix packet
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
  2. Place butter and cream cheese in a microwave-safe bowl; heat 20–30 seconds until soft. Whisk smooth.
  3. In a large bowl, combine cooked chicken, cooked rice, softened butter/cream cheese mixture, cream of chicken soup, minced garlic, Italian dressing mix, chicken stock, and half the Colby Jack cheese.
  4. Season with salt and pepper and mix until evenly combined.
  5. Transfer mixture to the prepared casserole dish and spread evenly.
  6. Top with remaining Colby Jack cheese.
  7. Cover with foil and bake 20–25 minutes, until the cheese is melted and the edges bubble.
  8. Remove from oven, rest 5 minutes, garnish with parsley, and serve warm.
