For the crumble topping:

  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup rolled oats
  • 6 tbsp melted butter
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (165°C). Line a springform pan with parchment paper and grease the sides.
  2. Make the crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the pan and bake for 8–10 minutes. Let cool.
  3. Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over cooled crust.
  4. Make the apple filling: Toss apples with brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Spoon evenly over cheesecake layer.
  5. Make the crumble topping: Mix flour, brown sugar, oats, melted butter, and cinnamon. Sprinkle over apples.
  6. Bake 50–60 minutes, until center is set but slightly jiggly.
  7. Cool completely, then chill in refrigerator 4–6 hours before serving.
