For the crumble topping:
- 1 cup all-purpose flour
- ½ cup brown sugar
- ½ cup rolled oats
- 6 tbsp melted butter
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 325°F (165°C). Line a springform pan with parchment paper and grease the sides.
- Make the crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the pan and bake for 8–10 minutes. Let cool.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over cooled crust.
- Make the apple filling: Toss apples with brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Spoon evenly over cheesecake layer.
- Make the crumble topping: Mix flour, brown sugar, oats, melted butter, and cinnamon. Sprinkle over apples.
- Bake 50–60 minutes, until center is set but slightly jiggly.
- Cool completely, then chill in refrigerator 4–6 hours before serving.
