Description

This balsamic steak gorgonzola salad features tender grilled steak, creamy gorgonzola cheese, grilled corn, and crisp greens, all brought together with a tangy homemade balsamic dressing. It’s elegant, flavorful, and perfect for both casual lunches and dinner parties.

Ingredients

Scale

Salad:

  • 4 cups mixed greens (e.g., arugula, spinach)
  • 200 grams grilled steak slices
  • ½ cup crumbled gorgonzola cheese
  • 1 cup grilled corn kernels
  • Optional: halved cherry tomatoes, thinly sliced red onions, avocado slices, toasted nuts

Dressing:

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme or rosemary

Instructions

  • Grill the Steak:
Season 200g steak with salt, pepper, and olive oil. Grill on high heat for 3–4 minutes per side. Let rest 5–10 minutes, then slice thinly against the grain.
  • Grill the Corn:
Soak corn in water for 10–15 minutes. Grill directly until charred or wrap in foil with butter/herbs for a softer texture. Cut kernels off cob.
  • Make the Dressing:
Whisk balsamic vinegar, olive oil, Dijon mustard, honey, garlic, and thyme or rosemary in a small bowl.
  • Assemble the Salad:
In a large bowl or platter, layer mixed greens, grilled steak slices, grilled corn, and gorgonzola cheese. Add any optional toppings.
  • Dress and Serve:
Drizzle dressing just before serving. Garnish with fresh herbs or a sprinkle of sea salt if desired.

Notes

  • Substitute gorgonzola with blue cheese, feta, or goat cheese.
  • Use plant-based steak and dairy-free cheese for a vegan version.
  • Store components separately and dress only before serving to prevent sogginess.
  • Can be made ahead and assembled fresh.
