Description

Soft, spiced cinnamon rolls infused with the sweetness of ripe bananas the perfect fusion of banana bread and classic cinnamon rolls. Easy to make and perfect for breakfast, brunch, or dessert.

For the Rolls:

  • 23 ripe bananas, mashed
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ⅓ cup melted butter (or plant-based alternative)
  • 1 egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour (or gluten-free flour blend)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp ground cinnamon

For the Filling:

  • Equal parts brown sugar + cinnamon (about ¼ cup each)

For the Glaze:

  • ½ cup softened cream cheese (or dairy-free)
  • ¼ cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a large mixing bowl, combine mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Stir until smooth.
  3. In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually fold dry ingredients into the wet mixture until just combined. Avoid overmixing.
  5. Turn dough onto a floured surface; roll into a ½-inch thick rectangle.
  6. Sprinkle cinnamon-sugar mixture evenly over the dough.
  7. Roll tightly into a log and slice into 1-inch pieces.
  8. Arrange rolls in prepared baking dish. Bake for 20–25 minutes or until golden brown.
  9. While baking, beat together cream cheese, powdered sugar, and milk until smooth.
  10. Drizzle glaze over warm rolls before serving.
