For the Rolls:
- 2–3 ripe bananas, mashed
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ⅓ cup melted butter (or plant-based alternative)
- 1 egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour (or gluten-free flour blend)
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp ground cinnamon
For the Filling:
- Equal parts brown sugar + cinnamon (about ¼ cup each)
For the Glaze:
- ½ cup softened cream cheese (or dairy-free)
- ¼ cup powdered sugar
- 1 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
- In a large mixing bowl, combine mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Stir until smooth.
- In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
- Gradually fold dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Turn dough onto a floured surface; roll into a ½-inch thick rectangle.
- Sprinkle cinnamon-sugar mixture evenly over the dough.
- Roll tightly into a log and slice into 1-inch pieces.
- Arrange rolls in prepared baking dish. Bake for 20–25 minutes or until golden brown.
- While baking, beat together cream cheese, powdered sugar, and milk until smooth.
- Drizzle glaze over warm rolls before serving.

- Use very ripe bananas for best moisture and flavor.
- Gluten-free and dairy-free options can easily be substituted.
- Add spices like nutmeg or cardamom for extra warmth.
- Avoid overmixing to keep the texture soft and fluffy.
