Description

Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • 1 cup mashed ripe bananas
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans

Optional Add-ins:

  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup chocolate chips
  • Turbinado sugar (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix mashed bananas, eggs, melted butter, milk, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. Fold in chopped nuts and any optional add-ins.
  6. Divide the batter evenly among the muffin cups, filling each about ⅔ full.
  7. Sprinkle tops with turbinado sugar, if using.
  8. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool slightly before serving.

Notes

  • Use overripe bananas for best flavor and moisture.
  • Do not overmix the batter it leads to tough muffins.
  • Toast the nuts beforehand for added crunch and flavor.
