Ingredients
Scale
- 2 cans young green jackfruit (in brine or water, drained and rinsed)
- 1 cup BBQ sauce (store-bought or homemade)
- ½ cup diced onion
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 4–6 sandwich buns
Optional Add-ins:
- ½ teaspoon smoked paprika
- 1–2 drops liquid smoke
- Pinch of cayenne pepper
- Vegan cheese or creamy coleslaw (for topping)
- Gluten-free buns (if needed)
Instructions
- Drain and rinse jackfruit; pat dry with paper towels.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
- Add jackfruit and shred with a fork or spatula into small pieces.
- Stir in BBQ sauce and any optional spices.
- Simmer 10–15 minutes, stirring occasionally, until jackfruit absorbs sauce and becomes tender.
- Toast buns lightly.
- Assemble sandwiches with BBQ jackfruit mixture. Top with coleslaw or pickles if desired.
- Serve warm.
Notes
- Use young green jackfruit, not ripe, for the best meaty texture.
- Simmer longer for deeper flavor and softer jackfruit.
- Store leftovers in the fridge up to 3 days, or freeze for up to 3 months.
- Reheat with a splash of BBQ sauce to keep moist.
- For a low-carb option, serve in lettuce wraps instead of buns.
