- 8 oz egg noodles
- 2 cups sliced mushrooms
- 1 diced onion
- 3 minced garlic cloves
- 1 cup beef broth
- 1 cup sour cream

- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste

Instructions
- Cook 8 oz egg noodles according to package instructions; drain and set aside.
- Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
- Brown 1 pound of beef until cooked through; remove and set aside.
- In the same skillet, sauté 1 diced onion and 2 cups sliced mushrooms until golden brown.
- Add 3 minced garlic cloves and cook for 1 minute.
- Sprinkle 2 tablespoons flour over vegetables; stir to make a roux and cook 1–2 minutes.
- Gradually whisk in 1 cup beef broth; simmer until thickened.
- Stir in 1 cup sour cream; return beef to skillet and heat through gently (do not boil).
- Season with salt, pepper, and optional Worcestershire sauce or paprika.
- Garnish with fresh parsley and serve over noodles.
