Description
Jiffy corn casserole is a creamy, buttery casserole combining corn muffin mix, sweet corn kernels, and creamed corn for a rich and satisfying side dish. Perfect for holiday dinners, potlucks, or as a comforting homemade meal. Easily paired with roasted chicken, grilled steak, or Thanksgiving turkey.
Ingredients
For the Casserole:
– 1 can (15 oz) canned corn kernels, drained
– ½ cup melted unsalted butter (substitute plant-based butter for vegan diets)
– 2 large eggs
– 1 box (8.5 oz) corn muffin mix (Jiffy recommended; substitute gluten-free mix if needed)
– 1 can (15 oz) canned creamed corn
– 1 cup sour cream (full-fat for best texture; substitute Greek yogurt or low-fat sour cream for lighter options)
Instructions
- Preheat oven to 350°F (175°C).
- Drain the canned corn kernels thoroughly to prevent excess moisture in the casserole.
- In a large mixing bowl, whisk eggs slightly with a fork. Add melted butter and sour cream, mixing until smooth.
- Stir in both cans of corn (drained whole kernel corn and creamed corn).
- Pour the contents of the corn muffin mix into the bowl with the wet ingredients. Stir until the mixture is smooth and free of lumps.
- Butter an 8×8-inch casserole dish to prevent sticking. Pour the mixture into the prepared dish, spreading it evenly for uniform baking.
- Place the dish in the preheated oven and bake uncovered for 45 minutes, or until the top is golden, the edges are slightly cracked, and the middle is firm to the touch.
- Remove from the oven and let cool slightly before serving warm.
Notes
– Use high-quality butter for maximum flavor. Substitute plant-based ingredients for vegan diets.
– Store leftovers in an airtight container in the fridge for up to 3 days. Freeze portions for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving for too long to preserve texture.
