Description

Blueberry Biscuits are tender, buttery biscuits bursting with juicy blueberries, offering a perfect balance of flaky layers and sweet-tart flavor. Easy to make and absolutely delicious, they’re ideal for breakfast, brunch, or an afternoon treat. Their simplicity, warm flavor, and soft texture make them a crowd-pleasing favorite for all occasions.

Ingredients

Scale

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • ½ cup cold unsalted butter, cubed
  • ¾ cup cold buttermilk
  • 1 teaspoon vanilla extract (optional)
  • 1 cup fresh or frozen blueberries

For Brushing (Optional):

  • 2 tablespoons melted butter
  • Honey or extra sugar, for glazing (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Cut in cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  4. Gradually stir in buttermilk and vanilla (if using) until just combined, do not overmix.
  5. Gently fold in blueberries.
  6. Turn the dough onto a lightly floured surface, shape into a rectangle, and fold it over itself twice to create layers.
  7. Roll to about ¾-inch thickness and cut into rounds with a biscuit cutter or glass.
  8. Place on the prepared baking sheet, brush with melted butter, and bake 12–15 minutes or until golden-brown.
  9. Brush with additional melted butter or drizzle honey if desired.

Notes

  • Avoid overworking the dough for the flakiest texture.
  • Add lemon zest or cinnamon for a flavor twist.
  • Use frozen blueberries directly from the freezer no need to thaw.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate up to 5 days.
  • Reheat in the oven at 350°F (175°C) for 5–10 minutes to refresh.
