Description

This blueberry French toast casserole recipe stands out for its vibrant flavors and effortless preparation. The combination of creamy custard, sweet blueberries, and crispy golden edges creates a dish that feels indulgent yet remains balanced. Whether you’re surprising guests or treating yourself, this dish impresses with its simplicity and charm.

Ingredients

– 1 loaf challah or brioche bread, cubed (substitute gluten-free bread if needed)

– 2 cups fresh blueberries (or frozen and thawed)

– 6 large eggs

– 2 cups milk (substitute almond, oat, or coconut milk for vegan diets)

– ½ cup heavy cream (substitute full-fat coconut milk for vegan diets)

– ½ cup maple syrup (substitute sugar-free syrup for low-sugar diets)

– 2 tsp vanilla extract

– 1 tsp ground cinnamon

– Pinch of salt

– Powdered sugar (for dusting)

– Whipped cream (optional, substitute plant-based whipped cream for vegan diets)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. Place the cubed bread into the dish and scatter the blueberries evenly over the top.

In a large mixing bowl, whisk together eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, and a pinch of salt until well combined. Pour the custard mixture over the bread and blueberries, ensuring everything is perfectly soaked.

Let it sit for about 30 minutes, or preferably overnight in the refrigerator, for the best flavor. Place the dish in the preheated oven and bake for 45–50 minutes, or until the top is golden and the custard has set.

Once baked, let it cool slightly before slicing. Serve warm with additional maple syrup and whipped cream, if desired.

Notes

Use day-old or stale bread for maximum absorption of the custard mixture. Substitute plant-based ingredients for vegan diets. Store leftovers in an airtight container in the fridge for up to 3 days. Freeze portions for longer storage; thaw in the fridge before reheating.
