Description

Blueberry oatmeal bars are a wholesome dessert or snack featuring a buttery oat base, juicy blueberries, and a crumbly topping. Perfect for breakfast, dessert, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.


Ingredients

For the Base and Topping:

– 1 cup old-fashioned oats (substitute certified gluten-free oats if needed)

– ¾ cup all-purpose flour (substitute gluten-free flour blend if needed)

– ⅓ cup light brown sugar

– ¼ tsp baking soda

– ¼ tsp salt

– ½ tsp cinnamon (optional)

– 6 tbsp unsalted butter, melted (substitute coconut oil or margarine for vegan diets)

– 1 tsp vanilla extract

For the Filling:

– 1 cup blueberries (fresh or frozen)

– ¼ cup granulated sugar

– 2 tsp cornstarch


Instructions

  1. Preheat oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, mix together oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Stir in melted butter and vanilla extract until the mixture is crumbly.
  3. Press half of the oat mixture firmly into the bottom of the prepared pan to form a base.
  4. In a separate bowl, toss blueberries with granulated sugar and cornstarch. Spread the blueberry mixture evenly over the oat base.
  5. Crumble the remaining oat mixture over the blueberries, gently pressing down.
  6. Bake for 35–40 minutes, or until the top is golden brown and the blueberries are bubbly.
  7. Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan and cut into squares.

Notes

– Use fresh blueberries for maximum juiciness or frozen berries if fresh aren’t available. Substitute plant-based ingredients for vegan diets.

– Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. Freeze for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
