Description

Blueberry pie bars are a delightful dessert featuring a buttery crust, juicy blueberry filling, and crumbly topping. Perfect for potlucks, picnics, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.


Ingredients

For the Crust and Topping:

– 1½ cups all-purpose flour (substitute gluten-free flour if needed)

– ½ cup sugar

– Pinch of salt

– ¾ cup cold unsalted butter, cubed (substitute plant-based butter for vegan diets)

For the Filling:

– 2 large eggs (substitute flax eggs for vegan diets)

– 1 cup sugar

– ⅓ cup all-purpose flour (substitute gluten-free flour if needed)

– ½ cup sour cream (substitute Greek yogurt or plant-based sour cream for vegan diets)

– Pinch of salt

– 3 cups fresh or frozen blueberries (if using frozen, wait until ready to pour into the crust to avoid discoloration)


Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch glass baking dish with non-stick spray.
  2. In a mixing bowl, combine flour, sugar, salt, and cubed butter. Beat until crumbly—do not overmix.
  3. Remove 1 cup of the mixture and set aside. Press the remaining mixture firmly into the prepared baking dish.
  4. Bake for 10–12 minutes, or until just firm to the touch and no brown on the sides.
  5. Whisk eggs in a large bowl. Add sugar, sour cream, flour, and salt, then gently fold in blueberries.
  6. Pour the filling over the baked crust and sprinkle with the reserved crumbly mixture.
  7. Bake for 1 hour, or until the top is lightly browned.
  8. Cool for 10 minutes before slicing into bars.

Notes

– Use fresh blueberries for maximum juiciness or frozen berries if fresh aren’t available. Substitute plant-based ingredients for vegan diets.

– Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. Freeze for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
