Ingredients
For the Crust and Topping:
– 1½ cups all-purpose flour (substitute gluten-free flour if needed)
– ½ cup sugar
– Pinch of salt
– ¾ cup cold unsalted butter, cubed (substitute plant-based butter for vegan diets)
For the Filling:
– 2 large eggs (substitute flax eggs for vegan diets)
– 1 cup sugar
– ⅓ cup all-purpose flour (substitute gluten-free flour if needed)
– ½ cup sour cream (substitute Greek yogurt or plant-based sour cream for vegan diets)
– Pinch of salt
– 3 cups fresh or frozen blueberries (if using frozen, wait until ready to pour into the crust to avoid discoloration)
Instructions
- Preheat oven to 350°F and spray a 9×13-inch glass baking dish with non-stick spray.
- In a mixing bowl, combine flour, sugar, salt, and cubed butter. Beat until crumbly—do not overmix.
- Remove 1 cup of the mixture and set aside. Press the remaining mixture firmly into the prepared baking dish.
- Bake for 10–12 minutes, or until just firm to the touch and no brown on the sides.
- Whisk eggs in a large bowl. Add sugar, sour cream, flour, and salt, then gently fold in blueberries.
- Pour the filling over the baked crust and sprinkle with the reserved crumbly mixture.
- Bake for 1 hour, or until the top is lightly browned.
- Cool for 10 minutes before slicing into bars.
Notes
– Use fresh blueberries for maximum juiciness or frozen berries if fresh aren’t available. Substitute plant-based ingredients for vegan diets.
– Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. Freeze for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
