For the Pastry Cream Filling:
- 1 cup whole milk
- ¼ cup granulated sugar
- 2 tablespoons cornstarch
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
For the Chocolate Glaze:
- ½ cup semisweet chocolate chips
- 2 tablespoons butter
- 2 tablespoons heavy cream
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
1. Prepare the Dough:
- In a bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Add flour, salt, egg, and melted butter. Mix until a dough forms.
- Knead for 5-7 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in size.
2. Make the Pastry Cream:
- In a saucepan, heat milk over medium heat until steaming.
- In a separate bowl, whisk sugar, egg yolks, and cornstarch. Slowly add warm milk, whisking continuously.
- Return mixture to saucepan and cook until thickened, stirring constantly.
- Remove from heat, stir in vanilla and butter. Cover and chill.
3. Shape and Fry the Donuts:
- Roll out dough to about ½-inch thick and cut into circles.
- Let rest for 15 minutes. Heat oil to 350°F and fry donuts until golden brown, about 1-2 minutes per side. Drain on a paper towel.
4. Fill the Donuts:
- Use a piping bag to inject pastry cream into each donut.
5. Make the Chocolate Glaze:
- Melt chocolate chips, butter, and heavy cream together. Stir in powdered sugar and vanilla.
6. Glaze the Donuts:
- Dip the tops of the filled donuts in the glaze. Let set before serving.
