  • 2 ½ cups all-purpose flour

  • 3 tablespoons unsalted butter, melted

For the Pastry Cream Filling:

  • 1 cup whole milk
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter

For the Chocolate Glaze:

  • ½ cup semisweet chocolate chips
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

1. Prepare the Dough:

  1. In a bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add flour, salt, egg, and melted butter. Mix until a dough forms.
  3. Knead for 5-7 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in size.

2. Make the Pastry Cream:

  1. In a saucepan, heat milk over medium heat until steaming.
  2. In a separate bowl, whisk sugar, egg yolks, and cornstarch. Slowly add warm milk, whisking continuously.
  3. Return mixture to saucepan and cook until thickened, stirring constantly.
  4. Remove from heat, stir in vanilla and butter. Cover and chill.

3. Shape and Fry the Donuts:

  1. Roll out dough to about ½-inch thick and cut into circles.
  2. Let rest for 15 minutes. Heat oil to 350°F and fry donuts until golden brown, about 1-2 minutes per side. Drain on a paper towel.

4. Fill the Donuts:

  • Use a piping bag to inject pastry cream into each donut.

5. Make the Chocolate Glaze:

  • Melt chocolate chips, butter, and heavy cream together. Stir in powdered sugar and vanilla.

6. Glaze the Donuts:

  • Dip the tops of the filled donuts in the glaze. Let set before serving.

Notes

  • For a baked version, bake at 375°F for 12-15 minutes instead of frying.
