  • ¼ cup granulated sugar
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter

  • 6 oz semi-sweet chocolate, chopped

Instructions

  1. Prepare the Crust

    • Stir in vanilla extract and heavy cream.
    • Pour over the cooled crust.
  1. Bake the Cheesecake
    • Place the springform pan in a water bath.
    • Bake for 45-60 minutes until edges are set, but center is slightly jiggly.
    • Let cool at room temperature, then refrigerate for at least 4 hours.
  1. Prepare the Pastry Cream
    • Heat milk in a saucepan until warm.
    • In a bowl, whisk sugar, cornstarch, and egg yolks.

Notes

  • Use full-fat cream cheese for the best texture.
  • A water bath helps prevent cracks in the cheesecake.
  • Let the ganache cool slightly before pouring to prevent melting the pastry cream layer.
