Description

Ingredients

– 1 (8 oz) tube refrigerated crescent roll dough (or gluten-free puff pastry)

– 4 large eggs, scrambled and cooled

– ¼ cup cooked bacon or sausage, crumbled (optional; omit for vegetarian)

– ¼ cup sautéed vegetables (e.g., spinach, bell peppers, onions—drained well)

– Salt and pepper, to taste

– 1 tablespoon milk or water (for egg wash, optional)

– Sesame seeds or fresh herbs (optional, for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Unroll crescent dough and separate into triangles (or cut puff pastry into 6–8 rectangles).
  3. On each dough piece, layer scrambled eggs, cheese, meat (if using), and vegetables—keeping fillings centered and not overloading.
  4. Roll tightly from the wide end to the point (or fold pastry over filling), sealing edges by pinching or crimping.
  5. Place rolls seam-side down on the baking sheet.
  6. (Optional) Brush tops with egg wash and sprinkle with sesame seeds or herbs.
  7. Bake for 15–20 minutes, or until golden brown and puffed.
  8. Let cool 3–5 minutes before serving.

Notes

– For vegetarian rolls: Skip meat; add mushrooms, avocado (added after baking), or tofu scramble.

– For gluten-free: Use certified gluten-free puff pastry or crescent-style dough.

– Prevent sogginess: Ensure all fillings (especially veggies) are well-drained and cooled before assembling.

– Make ahead: Assemble unbaked rolls and refrigerate up to 24 hours, or freeze before baking. Bake from frozen—add 3–5 extra minutes.

– Reheat: Warm in a 350°F oven for 10 minutes to restore crispness (avoid microwave if possible).
