Description
Flaky, golden breakfast rolls stuffed with scrambled eggs, melted cheese, and your choice of bacon, sausage, or veggies perfect for meal prep, brunch, or a quick on-the-go morning bite. Easily customizable for vegetarian or gluten-free diets.
Ingredients
– 1 (8 oz) tube refrigerated crescent roll dough (or gluten-free puff pastry)
– 4 large eggs, scrambled and cooled
– ½ cup shredded cheddar cheese (or mozzarella, feta, or dairy-free alternative)
– ¼ cup cooked bacon or sausage, crumbled (optional; omit for vegetarian)
– ¼ cup sautéed vegetables (e.g., spinach, bell peppers, onions—drained well)
– Salt and pepper, to taste
– 1 tablespoon milk or water (for egg wash, optional)
– Sesame seeds or fresh herbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Unroll crescent dough and separate into triangles (or cut puff pastry into 6–8 rectangles).
- On each dough piece, layer scrambled eggs, cheese, meat (if using), and vegetables—keeping fillings centered and not overloading.
- Roll tightly from the wide end to the point (or fold pastry over filling), sealing edges by pinching or crimping.
- Place rolls seam-side down on the baking sheet.
- (Optional) Brush tops with egg wash and sprinkle with sesame seeds or herbs.
- Bake for 15–20 minutes, or until golden brown and puffed.
- Let cool 3–5 minutes before serving.
Notes
– For vegetarian rolls: Skip meat; add mushrooms, avocado (added after baking), or tofu scramble.
– For gluten-free: Use certified gluten-free puff pastry or crescent-style dough.
– Prevent sogginess: Ensure all fillings (especially veggies) are well-drained and cooled before assembling.
– Make ahead: Assemble unbaked rolls and refrigerate up to 24 hours, or freeze before baking. Bake from frozen—add 3–5 extra minutes.
– Reheat: Warm in a 350°F oven for 10 minutes to restore crispness (avoid microwave if possible).
