Description

Broccoli and Cheddar Stuffed Chicken combines the lean protein of chicken with the richness of cheddar and the nutrients of broccoli. This dish is a favorite for meal planning and health-conscious eaters, offering a balance of flavor and nourishment. Perfect for lunch or dinner, it’s easy to prepare and satisfying.

Ingredients

  • Chicken breasts or thighs (boneless, skinless)
  • Fresh broccoli (steamed or blanched)
  • Sharp cheddar cheese (preferably aged)
  • Garlic powder
  • Fresh herbs (e.g., thyme, rosemary)
  • Olive oil (for marinating and sautéing)
  • Lemon juice (optional, for marinating)
  • Salt and pepper (for seasoning)

Instructions

  1. Prepare the chicken: Make a horizontal incision along the thickest part of each chicken breast to create a pocket.
  2. Prepare the broccoli: Steam or blanch the broccoli until tender, then season with salt, pepper, and garlic powder. Alternatively, sauté with olive oil and garlic.
  3. Prepare the stuffing: Finely chop the broccoli and mix with cheddar cheese, herbs, and a pinch of salt and pepper. Optionally, add garlic or lemon juice for extra flavor.
  4. Stuff the chicken: Stuff each chicken breast with the broccoli and cheddar mixture. Seal with toothpicks or kitchen twine.
  5. Cook the chicken: Choose one of the following methods:
    • Baking: Preheat the oven to 375°F (190°C). Bake the stuffed chicken for 25-30 minutes until the internal temperature reaches 165°F (74°C).
    • Pan-searing: Sear the chicken on both sides in a skillet over medium-high heat for 3-4 minutes, then transfer to the oven to finish cooking.
    • Air frying: Preheat air fryer to 375°F (190°C) and cook for 18-20 minutes, flipping halfway through.

Notes

  • You can prepare the stuffing ahead of time and store it in the fridge for up to 24 hours.
  • For a dairy-free version, substitute with dairy-free cheese or nutritional yeast and use olive oil instead of butter.
