Description
Butternut squash casserole is a creamy, cheesy casserole featuring roasted butternut squash, cauliflower, red onions, and Parmesan cheese, topped with aged cheddar for a comforting side or main dish. Perfect for holiday dinners, family gatherings, or as a healthy homemade meal. Easily paired with proteins like roasted chicken, grilled steak, or Thanksgiving turkey.
Ingredients
For the Casserole:
– 1 tsp sea salt (adjust to taste; substitute low-sodium options if needed)
– ½ cup diced red onions
– 1 can (10.5 oz) celery soup (Campbell’s recommended; substitute cream of mushroom or cream of chicken soup)
– 2 cups cauliflower florets (substitute broccoli, carrots, or Brussels sprouts for variety)
– 1 cup freshly grated Parmesan cheese (substitute plant-based Parmesan for vegan diets)
– 2 cups cubed butternut squash (fresh or pre-cubed)
– 1 tsp black pepper
For the Topping:
– Shredded aged cheddar cheese (amount to taste; substitute plant-based cheddar for vegan diets)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cauliflower florets, cubed butternut squash, and diced red onions.
- Pour in grated Parmesan cheese. Season lightly with sea salt and black pepper. Mix well to combine.
- Add the can of celery soup to the bowl and stir until all ingredients are evenly coated.
- Transfer the mixture into a square baking dish, spreading it out evenly.
- Top generously with shredded aged cheddar cheese.
- Bake for 25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
- Remove from the oven and let cool for a few minutes before serving.
Notes
– Use freshly grated Parmesan cheese for maximum flavor. Substitute plant-based ingredients for vegan diets.
– Store leftovers in an airtight container in the fridge for up to 3 days. Freeze portions for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving for too long to preserve texture.
