Ingredients

For the Casserole:

– ½ cup diced red onions

– 1 can (10.5 oz) celery soup (Campbell’s recommended; substitute cream of mushroom or cream of chicken soup)

– 2 cups cauliflower florets (substitute broccoli, carrots, or Brussels sprouts for variety)

– 1 cup freshly grated Parmesan cheese (substitute plant-based Parmesan for vegan diets)

– 2 cups cubed butternut squash (fresh or pre-cubed)

– 1 tsp black pepper

For the Topping:

– Shredded aged cheddar cheese (amount to taste; substitute plant-based cheddar for vegan diets)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cauliflower florets, cubed butternut squash, and diced red onions.
  3. Pour in grated Parmesan cheese. Season lightly with sea salt and black pepper. Mix well to combine.
  4. Add the can of celery soup to the bowl and stir until all ingredients are evenly coated.
  5. Transfer the mixture into a square baking dish, spreading it out evenly.
  6. Top generously with shredded aged cheddar cheese.
  7. Bake for 25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes
