Description

Cannoli pie is a rich, no-bake dessert inspired by traditional cannoli flavors, featuring a creamy ricotta-mascarpone filling in a buttery graham cracker crust, studded with chocolate chips. Perfect for holidays, potlucks, or homemade treats. Easily made gluten-free or lower-sugar.


Ingredients

For the Crust:

– 1½ cups graham cracker crumbs (or gluten-free graham crackers for GF option)

For the Filling:

– 1½ cups whole milk ricotta cheese (drained if watery)

– 1 tsp vanilla extract

– ½ tsp ground cinnamon

– ⅛ tsp salt

– Chopped pistachios

– Powdered sugar (for dusting)

– Whipped cream


Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and sides of a 9-inch pie pan.
  4. Bake for 8–10 minutes, or until lightly golden. Set aside to cool completely.
  5. In a large mixing bowl, beat together ricotta, mascarpone, and powdered sugar with a mixer on medium speed for 2–3 minutes, until smooth and creamy.
  6. Mix in vanilla, cinnamon, and salt. Fold in mini chocolate chips.
  7. Spoon the filling into the cooled crust and spread evenly with a spatula.
  8. Cover and refrigerate for at least 4 hours, up to overnight, to allow the filling to set.
  9. If desired, garnish with extra mini chocolate chips, chopped pistachios, powdered sugar, or whipped cream before serving.
  10. Slice, serve, and enjoy!

– Drain ricotta beforehand: Strain through a fine-mesh sieve or cheesecloth to remove excess liquid for a thicker consistency.
