Instructions

  1. Prepare the Cauliflower Rice: Chop cauliflower into florets and pulse in a food processor or grate it until rice-like. Dry with paper towels to remove excess moisture.
  2. Prepare the Stuffing: In a bowl, mix cauliflower rice, olive oil, rosemary, thyme, parsley, basil, oregano, and optional cheese or nuts. Season with salt and pepper to taste.
  3. Prepare the Chicken: Slice a pocket into each chicken breast or thigh. Optionally marinate with olive oil, lemon juice, and garlic for extra flavor and tenderness.
  4. Stuff the Chicken: Spoon the cauliflower rice mixture into the pockets of the chicken and secure with toothpicks if needed.
  5. Cook the Chicken:
    • Baking: Preheat the oven to 375°F (190°C). Bake for 25-30 minutes until fully cooked.
    • Pan-Searing: Sear the chicken on medium heat for 2-3 minutes per side, then finish in the oven.
    • Air Frying: Air fry at 375°F (190°C) for about 15 minutes, flipping halfway through.
  6. Rest and Serve: Let the chicken rest for 5 minutes before serving.
