Instructions
- Prepare the Cauliflower Rice: Chop cauliflower into florets and pulse in a food processor or grate it until rice-like. Dry with paper towels to remove excess moisture.
- Prepare the Stuffing: In a bowl, mix cauliflower rice, olive oil, rosemary, thyme, parsley, basil, oregano, and optional cheese or nuts. Season with salt and pepper to taste.
- Prepare the Chicken: Slice a pocket into each chicken breast or thigh. Optionally marinate with olive oil, lemon juice, and garlic for extra flavor and tenderness.
