    • ½ cup onions, sliced
    • ¼ cup mushrooms, sliced
    • 1 tsp hot sauce (optional)

Instructions

  1. Prepare the Beef:
    • Heat a skillet over medium-high heat and add butter.
    • Cook the thinly sliced beef until browned and caramelized. Set aside.
  2. Cook the Tortellini:
    • Boil tortellini according to package instructions until al dente.
    • Reserve ¼ cup pasta water before draining.
  3. Make the Provolone Sauce:
    • In the same skillet, melt butter and sauté garlic until fragrant.
    • Pour in heavy cream and beef broth, bringing it to a simmer.
    • Gradually add provolone cheese, stirring continuously until smooth.
    • Season with salt, pepper, and oregano. Adjust consistency with reserved pasta water if needed.
  4. Combine Everything:
    • Toss cooked tortellini and beef into the sauce, stirring until well coated.
    • Add optional veggies if using and cook for an additional 2 minutes.
  5. Serve and Enjoy:
    • Garnish with extra cheese or fresh parsley and serve immediately.
