This hearty dish brings together savory flavors and a creamy, gooey texture for the ultimate comfort food experience perfect for family dinners, holidays, or meal prep.

Ingredients

Scale
  • pounds ground beef
  • 4 pounds Russet potatoes, peeled and sliced into ¼-inch pieces
  • 1 medium yellow onion, finely diced
  • 2 cups grated cheddar cheese
  • 1 (10.75 oz) can condensed cheddar soup
  • 1 (12 oz) can evaporated milk
  • ½ cup milk
  • ½ teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste
  • (Optional) Plant-based ground beef, dairy-free cheese, and gluten-free condensed soup for dietary adjustments

Instructions

  1. Preheat oven to 350°F (177°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium-high heat, cook ground beef and diced onion until beef is browned and cooked through. Season with salt and pepper. Drain excess fat.
  3. Arrange a layer of sliced potatoes in the prepared baking dish. Season lightly with salt and pepper.
  4. Add ¼ of the beef mixture and ¼ of the cheese on top of the potatoes. Repeat layering three more times until all ingredients are used.
  5. In a bowl, whisk together condensed cheddar soup, evaporated milk, milk, and garlic powder until smooth.
  6. Pour the sauce evenly over the casserole layers.
  7. Cover tightly with aluminum foil and bake for 60 minutes.
  8. Remove foil and bake for an additional 15 minutes, or until golden and bubbly.
  9. Let rest a few minutes before serving for the perfect sliceable texture.

Notes

  • Use freshly grated cheese for smoother melting and richer flavor.
  • Slice potatoes thinly for even cooking.
  • For extra flavor, add smoked paprika, Worcestershire sauce, or red pepper flakes.
  • Make ahead: Assemble up to 24 hours in advance and refrigerate before baking.
  • Store leftovers in an airtight container in the fridge for 3 days or freeze up to 3 months.
