Muffin Batter:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk

Mix-ins:

 

  • 1 1/2 cups fresh cherries, pitted and chopped
  • 1 cup chocolate chips (semi-sweet, dark, or milk chocolate)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, sugar, and salt.
  3. In another bowl, whisk the wet ingredients: melted butter, eggs, vanilla extract, and buttermilk.
  4. Gently combine the wet and dry ingredients until just mixed. Do not overmix.
  5. Fold in the chopped cherries and chocolate chips using a spatula.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, sprinkle extra chocolate chips on top before baking.
  • These muffins can be frozen for up to 3 months. Wrap individually in plastic wrap and store in a freezer-safe container.
