Muffin Batter:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
Mix-ins:
- 1 1/2 cups fresh cherries, pitted and chopped
- 1 cup chocolate chips (semi-sweet, dark, or milk chocolate)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, sugar, and salt.
- In another bowl, whisk the wet ingredients: melted butter, eggs, vanilla extract, and buttermilk.
- Gently combine the wet and dry ingredients until just mixed. Do not overmix.
- Fold in the chopped cherries and chocolate chips using a spatula.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, sprinkle extra chocolate chips on top before baking.
- These muffins can be frozen for up to 3 months. Wrap individually in plastic wrap and store in a freezer-safe container.
