Ingredients
For the Chicken:
✔ 2 boneless, skinless chicken breasts (or thighs), cut into strips
✔ 2 tbsp olive oil
✔ Salt and black pepper, to taste
For the Alfredo Sauce:
✔ 2 tbsp butter
✔ 3 cloves garlic, minced
✔ 1 cup heavy cream
✔ 1 cup freshly grated Parmesan cheese
✔ ½ tsp salt
✔ ¼ tsp black pepper
For the Pasta:
✔ 12 oz fettuccine (or pasta of choice)
✔ 1 cup reserved pasta water
Optional Add-Ins:
✔ 1 cup steamed broccoli or spinach
✔ ¼ tsp crushed red pepper flakes (for heat)
✔ A pinch of nutmeg (for deeper flavor)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook fettuccine until al dente according to package instructions.
- Reserve 1 cup of pasta water before draining.
Step 2: Cook the Chicken
- Season chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook for 6–8 minutes, flipping halfway, until golden brown.
- Remove chicken from skillet and set aside.
Step 3: Make the Alfredo Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream and simmer for 2–3 minutes.
- Slowly whisk in Parmesan cheese until smooth and creamy.
Step 4: Combine Everything
- Return cooked pasta and chicken to the skillet.
- Toss to coat evenly in the Alfredo sauce.
- If sauce is too thick, add a splash of reserved pasta water to loosen.
Step 5: Serve and Enjoy
- Taste and adjust seasoning with more salt or Parmesan if needed.
- Garnish with chopped parsley and serve immediately.
Notes
- For best results, use freshly grated Parmesan cheese.
- Don’t overcook the pasta al dente is ideal!
- If reheating, add a little water, milk, or broth to loosen the sauce.
- Customize with veggies, shrimp, or extra cheese!
