Ingredients

For the Chicken:
✔ 2 boneless, skinless chicken breasts (or thighs), cut into strips
✔ 2 tbsp olive oil
✔ Salt and black pepper, to taste

For the Alfredo Sauce:
✔ 2 tbsp butter
✔ 3 cloves garlic, minced
✔ 1 cup heavy cream
✔ 1 cup freshly grated Parmesan cheese
✔ ½ tsp salt
✔ ¼ tsp black pepper

For the Pasta:
✔ 12 oz fettuccine (or pasta of choice)
✔ 1 cup reserved pasta water

Optional Add-Ins:
✔ 1 cup steamed broccoli or spinach
✔ ¼ tsp crushed red pepper flakes (for heat)
✔ A pinch of nutmeg (for deeper flavor)


Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook fettuccine until al dente according to package instructions.
  3. Reserve 1 cup of pasta water before draining.

Step 2: Cook the Chicken

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook for 6–8 minutes, flipping halfway, until golden brown.
  4. Remove chicken from skillet and set aside.

Step 3: Make the Alfredo Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in heavy cream and simmer for 2–3 minutes.
  4. Slowly whisk in Parmesan cheese until smooth and creamy.

Step 4: Combine Everything

  1. Return cooked pasta and chicken to the skillet.
  2. Toss to coat evenly in the Alfredo sauce.
  3. If sauce is too thick, add a splash of reserved pasta water to loosen.

Step 5: Serve and Enjoy

  1. Taste and adjust seasoning with more salt or Parmesan if needed.
  2. Garnish with chopped parsley and serve immediately.

Notes

  • For best results, use freshly grated Parmesan cheese.
  • Don’t overcook the pasta al dente is ideal!
  • If reheating, add a little water, milk, or broth to loosen the sauce.
