Description

These chicken and avocado burritos are packed with juicy grilled chicken, creamy avocado, fresh vegetables, and melty cheese all wrapped in a warm tortilla. With bold Mexican-inspired flavors and customizable ingredients, they’re perfect for a quick meal, meal prep, or entertaining.

Ingredients

Scale
  • 2 chicken breasts
  • 1 tablespoon taco seasoning
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • 4 tortillas (flour or corn)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or dairy-free)
  • 1 cup chopped lettuce
  • 1 tomato, diced
  • 1/4 onion, thinly sliced
  • Optional: sliced bell peppers, black beans, cooked rice, sour cream, salsa

Optional toppings: fresh cilantro, lime wedges, extra salsa or guacamole

Instructions

  1. Cook the Chicken: Season chicken breasts with taco seasoning. Grill, bake, or pan-sear until cooked through and juicy. Shred or slice.
  2. Make the Avocado Mixture: In a bowl, mash avocados with lime juice, salt, and pepper.
  3. Warm the Tortillas: Heat tortillas slightly until pliable.
  4. Assemble the Burritos: Layer each tortilla with avocado mixture, chicken, shredded cheese, lettuce, tomato, and any other desired fillings.
  5. Roll the Burritos: Fold the sides inward and roll tightly from the bottom.
  6. Optional Grilling: Grill burritos directly or in foil over medium heat until the exterior is crispy and golden.

Serve: Slice in half and garnish with cilantro, salsa, or lime wedges.

Notes

  • Use rotisserie chicken to save time.

  • Use gluten-free tortillas and dairy-free cheese to suit dietary needs.
  • Grill burritos for extra flavor and crispiness, or use the stovetop for a softer wrap.
