Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, sauté bell peppers and onions in olive oil until tender.
  3. Add shredded chicken, fajita seasoning, and diced tomatoes with green chilies. Stir to combine.
  4. Layer half of the tortilla chips in the baking dish.
  5. Add half of the chicken mixture and sprinkle with half of the shredded cheese.
  6. Repeat layers with remaining chips, chicken mixture, and cheese.
  7. Bake uncovered for 20–25 minutes or until bubbly and golden on top.
  8. Let rest for 5–10 minutes before serving.
  9. Garnish with sour cream, avocado, or fresh cilantro if desired.
