- 1 lb ground chicken (preferably lean)
- 1 medium zucchini, grated
- 1 cup fresh corn kernels (can be from 2–3 ears of corn)
- 1/4 cup finely chopped red onion
- 1 egg (to bind the patties)
- 1/4 cup breadcrumbs (optional for extra binding)
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- Salt and pepper to taste

Instructions
- Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towel and squeeze out excess moisture to prevent soggy patties.
- In a large bowl, combine the ground chicken, grated zucchini, fresh corn kernels, chopped red onion, egg, breadcrumbs (if using), garlic powder, paprika, salt, and pepper.
- Mix all ingredients until well combined. Be careful not to overwork the mixture to ensure tender patties.
- Divide the mixture into 4-6 equal portions and shape each into a patty, about 3/4 inch thick. If too sticky, moisten your hands with water or oil to shape the patties.
- Grill or pan-fry the patties (see cooking methods below).
Cooking Techniques:
- Grilling: Preheat grill to medium-high heat, brush with olive oil, and cook patties for 4-5 minutes per side until internal temperature reaches 165°F (75°C).
Pan-Frying: Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and fully cooked.
Notes
- To prevent patties from falling apart, ensure zucchini is well-drained.
- Season the patties with additional paprika or garlic powder for enhanced flavor.
- Add a tablespoon of olive oil to the mixture for a juicier burger.
- These burgers can be made ahead of time and stored in the fridge for up to 24 hours, or frozen for up to 3 months.
