Description
Chocolate chip cookie bars are a thick, gooey dessert combining the classic flavors of chocolate chip cookies in bar form for easy serving and sharing. Perfect for parties, potlucks, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.
Ingredients
For the Bars:
– 1½ cups unsalted butter, softened (substitute plant-based butter for vegan diets)
– 1½ cups light brown sugar, packed
– ¾ cup granulated sugar
– 2 large eggs (substitute flax eggs for vegan diets)
– 2 egg yolks (substitute additional flax eggs for vegan diets)
– 2 tbsp vanilla extract
– 3¾ cups all-purpose flour (substitute gluten-free flour if needed)
– 1½ tsp salt
– 1 tsp baking soda
– 2 cups semi-sweet chocolate chips (substitute dairy-free chips for vegan diets)
For Garnish:
– Maldon flakey sea salt
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
- Combine softened butter, brown sugar, and granulated sugar in a large bowl. Beat on medium speed for 2–3 minutes until well combined.
- Add eggs, egg yolks, and vanilla extract. Continue beating until fully incorporated.
- In a separate bowl, whisk together flour, salt, and baking soda. Gradually add dry ingredients to the wet mixture, mixing on low speed until dough starts to form.
- Before the dough thickens, fold in chocolate chips (reserve a small handful for sprinkling on top).
- Press the dough evenly into the prepared pan. Sprinkle reserved chocolate chips on top.
- Bake for 20–25 minutes, or until golden brown.
- Remove from the oven and sprinkle with flakey sea salt. Allow the bars to cool completely before slicing.
Notes
– Use high-quality chocolate chips for maximum flavor. Substitute plant-based ingredients for vegan diets.
– Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. Freeze slices for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
