Cinnamon Roll Blondies

Description

Cinnamon roll blondies are a soft, chewy blondie base swirled with a rich cinnamon-sugar mixture, offering the flavors of a cinnamon roll in bar form. Perfect for breakfast, dessert, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.


Ingredients

For the Blondie Base:

– 10 tbsp unsalted butter, melted (substitute plant-based butter for vegan diets)

– 1¾ cups light brown sugar, packed

– 2 large eggs (substitute flax eggs for vegan diets)

– 2 tsp vanilla extract

– 1½ cups all-purpose flour (substitute gluten-free flour if needed)

– 1 tbsp cornstarch

– 1 tsp ground cinnamon

– ¾ tsp baking powder

– ½ tsp salt

For the Cinnamon Swirl:

– 3 tbsp unsalted butter, melted (substitute plant-based butter for vegan diets)

– 2 tbsp light brown sugar

– 1 tbsp granulated sugar

– 2 tsp all-purpose flour (substitute gluten-free flour if needed)

– 1 tsp ground cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and spray an 8-inch pan with cooking spray. Line with parchment paper and set aside.
  2. Combine melted butter with light brown sugar and beat until well combined. Add eggs and vanilla extract, beating until smooth.
  3. Gradually mix in dry ingredients (flour, cornstarch, cinnamon, baking powder, salt) until a dough forms.
  4. In a separate bowl, combine melted butter, brown sugar, granulated sugar, flour, and cinnamon. Mix until smooth and spreadable.
  5. Press half the dough evenly into the prepared pan. Drizzle ⅔ of the cinnamon swirl mixture over the dough and gently swirl with a knife.
  6. Top with the remaining dough and drizzle the leftover cinnamon swirl on top, swirling again.
  7. Bake for 30–35 minutes, or until a toothpick inserted into the middle comes out clean.
  8. Cool completely in the pan before slicing.

Notes

– Use fresh cinnamon for maximum flavor and aroma. Substitute plant-based ingredients for vegan diets.

– Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. Freeze slices for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
