Description

These soft and cakey coffee cake donuts are infused with cinnamon, brown sugar, and a hint of coffee, topped with buttery streusel and a sweet glaze. They’re perfect for breakfast, brunch, or a cozy treat alongside your favorite cup of coffee.

Ingredients

Scale

For the Donuts:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • ¼ cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee powder

For the Streusel Topping:

  • ¼ cup all-purpose flour
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons cold unsalted butter, cubed

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Optional Add-ins:

  • Cinnamon chips
  • Chocolate drizzle
  • Chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, and instant coffee powder.
  3. In another bowl, whisk milk, melted butter, egg, and vanilla until smooth.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Spoon or pipe the batter into the donut pan, filling each cavity about ¾ full.
  6. In a small bowl, make the streusel by combining flour, brown sugar, cinnamon, and cubed butter. Use your fingers or a fork to blend until crumbly.
  7. Sprinkle the streusel over the batter.
  8. Bake for 8–10 minutes, or until a toothpick inserted comes out clean.
  9. Let donuts cool slightly before removing from the pan.
  10. Whisk together glaze ingredients and drizzle over cooled donuts.

Notes

  • Use room-temperature eggs and milk for smoother batter.
  • Pipe batter for even shapes and less mess.
  • Let donuts cool before glazing to avoid melting the glaze.
  • Store leftovers in an airtight container at room temp for 2 days or refrigerate for up to 5 days.
  • Freeze up to 1 month and reheat before serving.
