Description
Colcannon Irish mashed potatoes is a traditional Irish side dish blending creamy mashed potatoes with tender cabbage or kale, butter, and green onions. Perfect for holiday feasts, weeknight meals, or St. Patrick’s Day celebrations. Easily made gluten-free, vegetarian, or vegan.
Ingredients
For the Dish:
– 2 lbs russet potatoes, peeled and cut into 2-inch pieces (substitute Yukon Golds for a creamier texture)
– 1 cup whole milk (substitute unsweetened almond or oat milk for dairy-free option)
– 8 tbsp unsalted butter, cut into pieces (substitute plant-based butter for vegan option)
– 1 lb green cabbage, cored and coarsely chopped (substitute kale, spinach, or Swiss chard if needed)
– 4 green onions, white and green parts chopped
– ½ tsp kosher salt (adjust to taste)
– ¼ tsp freshly ground black pepper
Optional Add-ins:
– Caraway seeds, mustard powder, or smoked paprika (for extra depth)
– Diced leeks sautéed in butter, roasted garlic cloves, or crispy bacon bits (for added richness)
Instructions
- In a large saucepan, cover the peeled potato chunks with cold water by 1 inch. Bring to a boil, then reduce to a simmer and cook uncovered until tender, about 15 minutes. Drain thoroughly and set aside.
- In a medium saucepan, combine milk, butter, cabbage, green onions, salt, and pepper. Bring to a bare simmer over medium heat and cook, stirring occasionally, until the cabbage is tender but still vibrant, about 10–15 minutes.
- Add the drained potatoes to the cabbage mixture. Using a potato masher, mash everything together until creamy and well combined. Avoid using a food processor or stand mixer, as overworking the potatoes can make them gluey.
- Taste and adjust seasoning with additional salt and pepper if needed. Serve warm, topped with an extra pat of butter if desired.
Notes
Notes
– Choose russet potatoes: They yield a light, fluffy mash that absorbs flavors beautifully.
– Avoid overcooking the cabbage: It should be tender but still hold its shape and color.
– Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Freeze individual portions for longer storage; thaw overnight in the fridge before reheating. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth to restore creaminess.
– Customizations: Swap cabbage for kale, spinach, or Swiss chard. Stir in diced leeks, roasted garlic, or crispy bacon bits for extra flavor.
