Filling:

  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together butter, granulated sugar, brown sugar, and peanut butter until smooth.
  3. Beat in eggs and vanilla extract.
  4. Gradually mix in flour, baking soda, and salt until just combined.
  5. Roll dough into tablespoon-sized balls and flatten slightly with a fork in a crisscross pattern.
  6. Bake 10–12 minutes until lightly golden.
  7. Cool completely on a wire rack.
  8. For filling: beat peanut butter, powdered sugar, butter, and vanilla until smooth.
  9. Spread or pipe filling onto the flat side of one cookie and top with another to form sandwiches.
