Description

Cowboy butter prime rib is a tender, boneless prime rib roast seasoned with a bold and zesty cowboy butter blend. Perfect for special occasions, holiday gatherings, or homemade meals. Easily made gluten-free or customized for unique flavors.


Ingredients

For the Cowboy Butter:

– 1 cup unsalted butter, softened (substitute grass-fed or plant-based butter for dietary needs)

– 2 tbsp coarse Dijon mustard

– 2 tbsp fresh chives, chopped

– 2 tbsp fresh parsley, chopped

– 4 tsp fresh thyme leaves

– 4 tsp minced garlic

– 2 tsp lemon juice

– 1 tsp paprika

– ½ tsp kosher salt

For the Prime Rib:

Instructions

  1. In a medium bowl, combine softened butter, Dijon mustard, chives, parsley, thyme, garlic, lemon juice, paprika, salt, black pepper, cayenne, and red pepper flakes. Mix until well combined. Reserve ⅓ cup of the cowboy butter for serving.
  2. Remove the roast from the refrigerator and let it sit at room temperature for 2 hours to ensure even cooking. If uneven in shape, tie it with kitchen twine at 2-inch intervals.
  3. Preheat the oven to 500°F. Place a roasting rack inside a large roasting pan and set the roast on the rack.
  4. Pat the roast dry with paper towels and rub generously with the cowboy butter.
  5. Roast at 500°F for 15 minutes to develop a browned, flavorful crust. Without opening the oven door, reduce the temperature to 325°F.
  6. Continue roasting for 13–15 minutes per pound, checking the internal temperature 30–40 minutes before the estimated end time. The roast is ready when the thickest part reaches 120°F–125°F for medium-rare or 130°F–135°F for medium.
  7. Remove the roast from the oven, tent loosely with foil, and let rest for 30 minutes.
  8. Slice against the grain and serve with the reserved cowboy butter, softened or slightly melted.
