Description

Creamy corn dip is a rich and flavorful dip made with sweet corn, cream cheese, sour cream, and fresh vegetables. Perfect for parties, game nights, or casual gatherings. Easily made gluten-free, dairy-free, or vegan.


Ingredients

For the Dip:

– 2 cups sweet corn (canned or frozen, drained thoroughly; substitute fresh corn if desired)

– 8 oz cream cheese, softened (substitute plant-based cream cheese for vegan diets)

– ½ cup sour cream (substitute Greek yogurt or plant-based sour cream for vegan diets)

– ¼ cup mayonnaise (substitute vegan mayo for vegan diets)

– ½ cup red bell pepper, finely diced (substitute roasted poblano peppers for variety)

– ¼ cup green onion, thinly sliced

– 2 tbsp fresh cilantro, chopped

– 1 tbsp lime juice

– ½ tsp salt

– ¼ tsp black pepper

– 1 jalapeño, minced (optional, omit for milder flavor)


Instructions

  1. In a large mixing bowl, beat softened cream cheese until smooth.
  2. Add sour cream and mayonnaise, mixing until fully combined.
  3. Finely dice red bell pepper, slice green onions, chop cilantro, and mince jalapeño if using.
  4. Fold in corn, red bell pepper, green onion, cilantro, lime juice, salt, and pepper into the creamy base. Mix until everything is well distributed.
  5. Cover the dip and refrigerate for at least 1 hour to allow flavors to meld. For even better flavor, chill for up to 24 hours.
  6. Stir before serving and garnish with extra herbs if desired. Serve cold with chips, crackers, or fresh veggies.

Notes

– Use fire-roasted corn for extra depth of flavor. Substitute plant-based ingredients for vegan diets.

– Store dip in an airtight container in the fridge for up to 3 days. Freeze portions for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
