  • 1 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Prepare the chicken: Season chicken breasts with salt and pepper.
  2. Sear the chicken: Heat butter and olive oil in a skillet over medium-high heat. Sear chicken for 5 minutes per side until golden brown. Remove and set aside.
  3. Cook the mushrooms: In the same pan, add mushrooms and onions. Sauté until softened and browned, about 5 minutes.
  4. Add garlic and deglaze: Stir in garlic and cook for 30 seconds. Pour in white wine or chicken broth, scraping up the browned bits.
  5. Make the sauce: Lower the heat and add heavy cream, thyme, and Parmesan (if using). Simmer for 5 minutes until thickened.
  6. Combine: Return the chicken to the pan, coating it in the sauce. Simmer for another 5 minutes or until the chicken is cooked through.
  7. Serve: Garnish with fresh parsley and serve over rice, pasta, or mashed potatoes.
