Instructions

- Cut zucchini into thin strips, about ½ inch thick and 4 inches long.
- Prepare three shallow dishes:
- Dish 1: Mix flour and seasonings (Old Bay, garlic, paprika, black pepper).
- Dish 2: Lightly beat the eggs.
- Dish 3: Combine Parmesan cheese and breadcrumbs.
- Dip each zucchini strip into the flour mixture, coating evenly.
- Next, dip into the egg wash, letting excess drip off.
- Coat with the Parmesan-breadcrumb mixture, pressing gently to adhere.
- Arrange zucchini strips on a parchment-lined or silicone-mat-lined baking sheet without touching.
- Lightly mist the zucchini with oil or cooking spray.
- Bake for 20-25 minutes, turning halfway. For extra crispiness, broil for 2-3 minutes at the end.
- Serve immediately with your favorite dipping sauces.
