Ingredients

Scale

For the Chicken Marinade:

  • 1.5 pounds chicken tenders or breast fillets
  • 1/2 cup Greek yogurt
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 2 tbsp olive oil

For the Coating:

  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1/2 tsp dried oregano
  • Salt and pepper (to taste)

2 eggs, beaten

Instructions

 Step 1: Prepare the Chicken

  1. If using chicken breasts, slice into strips.
  2. In a bowl, mix Greek yogurt, lemon juice, lemon zest, garlic, oregano, paprika, and olive oil.
  3. Add chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 4 hours.

Step 2: Set Up the Breading Station

  1. Combine panko breadcrumbs, flour, dried oregano, salt, and pepper in one dish.
  2. Beat eggs in another dish.

Step 3: Coat the Chicken

  1. Dip each chicken strip into the egg, then coat with the breadcrumb mixture. Press gently to adhere.

Step 4: Cook the Chicken

  • Pan-Frying: Heat olive oil in a skillet over medium heat. Cook tenders for 3–4 minutes per side until golden brown.
  • Baking: Preheat oven to 400°F (200°C). Place tenders on a parchment-lined baking sheet, spray with oil, and bake for 20–25 minutes, flipping halfway.
  • Air-Frying: Preheat air fryer to 375°F (190°C). Cook tenders in batches for 8–10 minutes, flipping halfway.

Notes

  • Marinate overnight for maximum flavor.
  • Use fresh ingredients like lemons and herbs for the best taste.
