Description

Crock pot breakfast potatoes are tender, slow-cooked Yukon Gold potatoes with onions, bell peppers, and melted cheddar cheese seasoned with garlic, paprika, and butter for a hearty, hands-off brunch side. Naturally gluten-free and easily made vegan or low-carb.


Ingredients

– 3 lbs Yukon Gold potatoes, cut into 1-inch bite-sized pieces

– 1 medium yellow onion, cut into 1-inch pieces

– 1 medium red bell pepper, cut into 1-inch pieces

– 2 tbsp unsalted butter, melted (or plant-based butter)

– ½ tsp salt

– 1 tsp black pepper

– 1 tsp onion powder

– 1 tsp paprika

– 3 tsp minced garlic (about 3 cloves)

– 1½ cups shredded cheddar cheese (or dairy-free alternative)


Instructions

  1. Cut potatoes, onion, and bell pepper into uniform 1-inch pieces.
  2. Place all ingredients except cheese into a 6-quart slow cooker.
  3. Drizzle with melted butter and sprinkle with salt, pepper, onion powder, paprika, and garlic.
  4. Toss gently until vegetables are evenly coated.
  5. Cover and cook on HIGH for 2½–3 hours or LOW for 4–5 hours, until potatoes are fork-tender.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Cover and cook for 5–10 more minutes, until cheese is fully melted.
  8. Gently stir once to distribute cheese, then serve hot.

Notes

– Uniform cuts prevent mushy or undercooked potatoes.

– Prep ahead: Store chopped potatoes in cold water overnight to prevent browning; drain well before using.

– Gluten-free: Naturally GF, no modifications needed.
