Ingredients
– 3 lbs Yukon Gold potatoes, cut into 1-inch bite-sized pieces
– 1 medium yellow onion, cut into 1-inch pieces
– 1 medium red bell pepper, cut into 1-inch pieces
– 2 tbsp unsalted butter, melted (or plant-based butter)
– ½ tsp salt
– 1 tsp black pepper
– 1 tsp onion powder
– 1 tsp paprika
– 3 tsp minced garlic (about 3 cloves)
– 1½ cups shredded cheddar cheese (or dairy-free alternative)
Instructions
- Cut potatoes, onion, and bell pepper into uniform 1-inch pieces.
- Place all ingredients except cheese into a 6-quart slow cooker.
- Drizzle with melted butter and sprinkle with salt, pepper, onion powder, paprika, and garlic.
- Toss gently until vegetables are evenly coated.
- Cover and cook on HIGH for 2½–3 hours or LOW for 4–5 hours, until potatoes are fork-tender.
- Sprinkle shredded cheddar cheese evenly over the top.
- Cover and cook for 5–10 more minutes, until cheese is fully melted.
- Gently stir once to distribute cheese, then serve hot.
