Ingredients
– 2 lbs sirloin steak, cut into 1½-inch bite-sized pieces
– 1 cup diced yellow onion
– 1 lb petite Yukon Gold potatoes, halved
– ½ lb asparagus, trimmed and cut into 2-inch pieces
– ½ cup (1 stick) unsalted butter, melted
– 4 tsp minced garlic (about 4 cloves)
– 1 tbsp Worcestershire sauce
– 1 tsp black pepper
– 1 tsp paprika
– ½ tsp mustard powder
– ½ tsp dried rosemary
– ½ tsp dried thyme
– Optional garnish: fresh parsley or chives
Instructions
- Arrange potatoes on one side of a 6-quart slow cooker and asparagus on the other.
- In the center, combine steak bites and diced onion.
- In a medium bowl, whisk together melted butter, garlic, Worcestershire sauce, black pepper, paprika, mustard powder, rosemary, and thyme.
- Pour the sauce evenly over all ingredients in the slow cooker.
- Cover and cook on LOW for 4–5 hours, or until steak is tender and potatoes are fork-tender.
- Garnish with fresh parsley or chives before serving. Serve hot as a complete meal.
