Description

Crockpot cheeseburger soup is a rich, creamy, and cheesy dish that combines ground beef, tender potatoes, and a velvety cheese sauce for the ultimate comfort food. Slow-cooked to perfection, it delivers all the flavors of a cheeseburger in a hearty soup form. Perfect for family dinners, busy weeknights, or cozy weekends, this soup is versatile, satisfying, and easy to make with minimal effort.

Ingredients

Scale
  • 1 lb ground beef
  • 4 small potatoes, peeled and diced
  • 1 small white onion, chopped
  • 1 cup shredded carrots
  • 3 cups beef broth
  • 1 can cream of mushroom soup
  • 1 tsp Italian seasoning
  • 1 tsp minced garlic
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups shredded cheddar cheese
  • 8 oz cream cheese, cut into pieces

Optional Add-ins:

  • Sautéed mushrooms
  • Diced tomatoes
  • Pickles
  • Spinach or other greens

Instructions

  1. Brown ground beef in a skillet over high heat; drain excess grease.
  2. Peel and dice potatoes, chop onions, and shred carrots.
  3. Place ground beef, potatoes, onions, and carrots in a 6-quart slow cooker.
  4. Add beef broth, cream of mushroom soup, and seasonings (Italian seasoning, garlic, salt, pepper). Stir to combine.
  5. Cover and cook on low for 6 hours or on high for 3 hours until potatoes are tender.
  6. Stir in shredded cheddar cheese and cream cheese pieces. Cover and cook on low for 30 minutes until cheese is melted and fully incorporated.
  7. Ladle into bowls and garnish with toppings like pickles, green onions, or sour cream.

Notes

  • Use freshly shredded cheddar for smoother melting.
  • Add cheese at the end to avoid curdling.
  • For low-carb, substitute potatoes with cauliflower florets.
  • Store leftovers up to 4 days in the fridge. Freeze without cheese, then add cheese when reheating.
