  • 3 celery stalks, chopped
  • 3 carrots, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp dried thyme
  • 1 tsp minced garlic
  • ¼ cup all-purpose flour
  • 4 cups water (for flour mixture)
  • 4 cups chicken broth
  • 4 cups water
  • 16 oz frozen noodles (such as Reames) or egg noodles

Optional Add-ins:

  • Sautéed mushrooms
  • Spinach or zucchini
  • Red pepper flakes, cayenne, or smoked paprika
  • Fresh herbs (parsley, thyme, dill)

Instructions

  1. Chop chicken, onion, celery, and carrots, then place them in a 6-quart crockpot.
  2. Add salt, pepper, thyme, and garlic.
  3. In a medium bowl, whisk together flour and 4 cups water until smooth, then pour into the crockpot.
  4. Add chicken broth and remaining 4 cups of water, stirring to combine.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in frozen noodles and cook on low for 1 hour or high for 30 minutes, until noodles are tender.
  8. Ladle soup into bowls and serve warm.

Notes

  • Use high-quality chicken broth for the richest flavor.
  • Add noodles only during the last hour of cooking to prevent mushiness.
  • For gluten-free, swap in GF noodles and broth.
